Cereal for dinner, what are you having?

I love my job, it gives me a break from my kids!

 

Making dinner sux at the end of the day when I only have a 1 1/2  to 2 hours to spend with my kids before their bedtime and I don't want to be cooking the whole time! Last night my kids had hummus, apple sauce & carrots, my husband had leftovers and I had cereal - which is fine, but not more then 2X per week.

 

I am looking for quick, easy, low fat, with veggies, dinner ideas - any suggestions?

I think that is great. Americans eat too much at dinner time anyway. Feed the kids big breakfasts and lunches with snacks in between and a light dinner is all they need. Better for the bodies anyway. I have lots of dinner ideas but not enough room to put here. I will post something later.

pasta is quick. make it with in season veggies (squash, zuch, spinach, carrots etc) sauteed in a little bit of veggie broth and some oregano, & canned kidney beans, s/p instead of sauce. mix it in with your pasta and leave some on the side for the kids next to the past plain with butter & ch

but wait - why are you having to cook dinner when you get home from work? Why doesn't your DH have it ready for when you get home?

Oh rockergirrl, I don't know if I want to get into that...but that is what I think most of the time too. So you cook dinner every night?

  Life is crazy but wonderful.

Burritos. They are quick, the kids love them and you can put anything in them. If we have leftover chicken or beef we make burritos or quesidillas, the kids get excited on these nights.

Yes. I don't always like it but if I didn't have dinner ready when he got home the kids would go to be so late. I guess I just figure that I am the one who is at home and I have more time (well sometimes) to get it ready before he gets home.

I second burritos. We have them weekly. Sometimes just bean, cheese & salsa, some weeks more packed with veggies and tofu. I make a HUGE batch and then it covers lunches for a few days too.

I meant to tell you about this one, Buddy. Thai Beef. We just use meatless meat, add a few spices (mild for the kiddies) and I add peppers and onions. Serve it over brown rice with a slice of homemade bread from the bakery. It's so simple and so delicious. want the recipe?
