It seemed like a good idea at the time...

I love my job, it gives me a break from my kids!

 

Really, do we as a family of four need 1.5 bushels of apples? I got caught in the frenzy of apple picking this weekend. Before we left for the orchard,  I knew I wanted a lot of apples for snacking, DD wanted to make a pie, I wanted to try this new slaw salad recipe, kids wanted apple sauce, so I was on a mission to pick a lot of apples. Mission accomplished!

I spend $41 dollars on the almost organic apples. And have made my money back in one day. We made a pie (store bought $13), made apple, broccoli, cabbage, carrot, cranberry, walnut slaw ($6) , made a huge pot of apple sauce which is now frozen in batches in our freezer ($9) , the kids ate about 6 yesterday ($4), gave away a about a dozen yesterday to our neighbors ($8), brought in a bunch to work today and we still have 2 bags full!

I heard apple bread is good and I might try that. And I'll make some apple crisp and something appley with pork. But what else am I missing?

If anyone is interested in the slaw recipe, here it is:
1 bag of carrot & broccoli slaw
1/2 shredded cabbage
1/2 cup of dried cranberries
1/2 chopped walnuts
1 cup chopped apples (more if you have bushel and a half of apples)
store bought - cranberry, gorgonzola, walnut salad dressing to your taste - I added the whole bottle.

Mix all together and chill. Serve when hungry .

Hmm. I'm running a Fall Festival this Saturday, and you got me thinking about food for our booth that also sells candles, etc. Selling apples would be a healthy treat to the fair goers, maybe I should get some!

EvilStepMom - it took me all day yesterday to peel all those sucker! Not to mention the kids would steal my already peeled apples for their snacks! I use store bought pie crust and that's a time saver.

Mumsey - Another suggestion for your booth would be to sell hot apple cider (or cold) that's a hit up here in Vermont. Caramel apples are yummy too.

Try this! Does not take long, and it is pretty healthy. You can skip the wine for kids and use apple juice or water instead:
Cinnamon Baked Apples
Who can resist the aroma of baked apples wafting through the household? Top with nonfat vanilla frozen yogurt for a real treat.
Ingredients
4 apples
4 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1 cup white wine

Directions
1. Preheat oven to 350°F.
2. Create a small well in the center of apples by cutting out the stem and core and leaving the bottom intact. Transfer the apples to an 8-by-8-inch glass baking dish. Fill each well with 1 tablespoon brown sugar. Sprinkle cinnamon over apples. Pour wine around the apples, cover with foil and bake until soft, about 1 hour. Let cool before serving.

You must be swimming in apples! Apple bread freezes really well. Think about stuff you can freeze when it's not apple season. Here's to your health!
