Dinner Staples-Need More!

Posted October 10, 2007 at 12:45AM by WILMom
Mommy of 2 Girls!

I have only really been trying to cook for about 6 years and have some good dinner staples built up that I am confident making.  I need some new, somewhat quick, somewhat cheap and healthy (as in uses more than 1 food group) staple meals.  What are your good old fallback anytime fav meals to make?  Don't necessarily need recipes, just ideas for good weeknight meals.  Here are my most famous:

Spaghetti w/meat sauce
Any frozen foods i.e. chicken fingers, fish filets, lasagna, pizza
Homemade lasagna
Chili and cornbread
Meatloaf
Grilled tuna, mahi
All kinds of potatoes
Tacos, enchiladas
English Muffin Pizzas
Hamburger Helper lol
BBQ Chicken Salad

PS My husband hates cream sauces :'''''(

  Life is crazy but wonderful.

Hamburger vegetable soup with alphabet pasta. The kids love it. Hamburgers, quesidillas, pizza, and different chicken recipes, I usually slice chicken into thin strips, bake or grill them, no breading and give the kids dipping sauce with raw veggies. I also make bbq chicken sandwiches in my slow cooker that my daughter absolutely loves. It is cheap because I use cheap chicken thighs, put them in my slow cooker with our favorite bbq sauce and let them cook all day. Fish out the bones, shred the chicken and put on rolls, with raw veggies. My daughter gets excited when we have bbq chicken sandwiches.

I love my job, it gives me a break from my kids!

This pasta dish is easy and a hit w/company.
brown garlic in olive oil - as much garlic as you want
add a can of artichoke hearts
add a can of black olives - chopped (you don't want the baby to choke!)
when everything is cooked (10 mins) add a chopped tomato
add more olive oil and pour over pasta, we use the curly kind or the tube which are a great finger food for the babe too.

  I'm with my child :)

Pizza! I put tons of veggies on a pre made crust, and lots of cheese. This is funky, but I like toasted bagels with cottage cheese & peaches. But that just might the baby the talking - LOL!

Hoping to give Olivia a sibling in 2009! (or 10)

I love Shepherd's Pie - and so do my DH and DD. I chop about half of a sweet onion and cook it in oil so soften it, then add a pound of ground beef until brown. Then I add fresh or canned mushrooms canned peas and carrots, 2-4 tablespoons of worchestershire sauce (to taste) and about 2 cups of instant beef gravy - I let it simmer for 15 minutes or for hours - either way it is great. I serve it with mashed potatoes. Sometimes I put the finished, reduced meat mixture in a casserole dish, cover it with the potatoes and sprinkle it with cheese then bake it for 10 minutes or so to melt the cheese.
