Sneaky Chef Question of the Week: Quick and Healthy Breakfast

Dear Rocker Girrl,
Your kids are doing pretty well by most standards these days. A quick and easy addition to the weekday morning routine would be to have some instant protein on hand to balance the sugar and carbs in the fruit, cereal and muffins they're getting now.
I don't know what they're already smearing on the english muffins, but try a tablespoon of low fat cream cheese, peanut butter or a slice of low fat cheese or turkey; the fats and protein in these quick additions will result in a far longer burn time than they've been getting now with the carbs.
You can also send them off with some of my "Breakfast Cookies" in their pockets for later. They contain whole grains and low fat ricotta cheese, and you can make them as far in advance as you like and store them in the fridge or freezer. Kids love 'em because they're called "Breakfast Cookies," but in reality they're packed with nutrition and just shaped like a cookie. My husband can't get enough of them either! By the way, you can also make pancakes and store them in the freezer, then just toast them up in the morning!
That should keep 'em until lunch, and no extra time for you in the kitchen.
