Thanksgiving Dessert Recipe - Maple Oatmeal Pie

Life is crazy but wonderful.

 

I am always looking for different dessert recipes for thanksgiving besides pumpkin and apple pie, and a couple of years ago I came up with a real winning recipe.  My hubby and daughter love this pie, in fact my daughter wanted this pie instead of cake for her birthday so here is my recipe for Maple Oatmeal Pie

1 9 inch crust - I always use Pillsbury roll out crust, it is easy and good

3 eggs

2 TBSP butter - softened

2/3 cup oatmeal

2/3 cup coconut

1/2 cup crushed walnuts

1 tsp vanilla

2 cups maple syrup - Of course Vermont's own maple syrup - I get it straight from the farm, but any will do if you don't have a maple farm around the corner.

Beat eggs and butter together.  Combine the rest of the ingredients and stir well.  Bake in a 350 degree oven for about 40 minutes.  Check center with toothpick and make sure it comes out clean.   I always warm it before serving and my hubby always has vanilla ice cream with it.
