The Day After

Where am I and what have they done to my body?

So your turkey was glorious, the stuffing filling and sides and desserts way too many to count.  If some of us are lucky we've sent home the leftovers with friends and loved ones and for those of us who have a little too much to know what to do with, this tip is for you.  Instead of 3 days of leftovers (if you're lucky), freeze those cooked veggies for another night's meal, same goes for the stuffing.  And the extra turkey after oodles of sandwiches and flaming turkey wings can get cut up for a pot pie and frozen in little zip loc bags.  Also extra gravy is great to freeze in ice cube trays and later put in soups for a little extra something.

I have a great recipe for turkey pot pie that a friend gave me a while back and thought I'd share.

1 cup cut up turkey (white or dark meat or both)
1 can cream of chicken soup
1 box frozen peas and carrots or some of those leftover veggies (or whatever veggie you like)
1 cup bisquick

Thaw frozen veggies and any other frozen goodies
mix together soup, veggies and turkey and place in a pie plate or round casserole dish
Then prepare bisquick to package directions for drop biscuts and spread over the top of the soup mixtue in dish
cook oncovered at 350 degrees until crust is golden and inside mixture is bubbling (about 30 minutes, give or take)

It's really yummy and kids and adults like it.  I like to have a little cranbery sauce on the side too.

This is a favorite for us and I get to make it a few times a year at least.  It's really good with anything and if you don't like the cream of chicken, feel free to use your favorite cream soup.

I hope you enjoy!

I never thought of freezing the whole pie. That's a great idea!
You should see my freezer after Thanksgiving, it has all these little ziplocs in it with labels and stuff. it's so funny!

  Life is crazy but wonderful.

I love freezing dishes. I usually use pie crust, the easy roll out kind, and put it in a foil pie dish cover with foil and freeze. Not is it an easy dinner there is no pan to clean up.

I'm liking it even better, no mess, no fuss and a good meal. What's not to like? Now I want turkey pot pie.
