5 easy meals you can make tonight

ok, here's a quick round up because that black 4:00 "what's-for-dinner?" cloud is rolling in...

classics with a twist:

1. Avocado Quesadilla






2.  Fresh Tomato Pizza
skip the nasty pepperoni & sausage with chemicals...choose tomatoes and red sauces, yum!


Fresh Tomato Pizza
 
Serves 4 (2 pieces per serving)
Preparation time: 10 minutes
Cooking time: 15 to 20 minutes
  • For best results, use fresh Italian plum tomatoes, which are available all year. Vegetable oil spray
  • 1 (10-ounce) package refrigerated pizza dough
  • 3 or 4 medium Italian plum tomatoes, thinly sliced
  • 1/4 cup snipped fresh basil or parsley
  • Freshly ground black pepper
  • 1 cup shredded part-skim mozzarella cheese
Preheat oven to 425°F. Spray 12-inch pizza pan with vegetable oil. Press dough evenly into prepared pan. Arrange tomato slices on top. Sprinkle with basil and season with pepper. Sprinkle with cheese. Bake 15 to 20 minutes or according to package directions. Cut into 8 wedges. Nutrient analysis per serving: Calories 284, Protein 15g, Carbohydrates 40g, Total Fat 7g (Saturated 3g, Polyunsaturated 1g, Monounsaturated 2g), Cholesterol 16mg, Sodium 500mg

3. Hummus and Pita with Couscous

Excellent with veggies and tomatoes to dip in the bean sauce. Lots of flavor, easy 1-2-3 on the table meal. No cooking required...microwave the couscous and add broccoli.

Serve dip, pita bread, veggies, couscous on a divided plate and have fun with finger foods.



4. Chicken Caesar Wraps


Buy tortillas, a chicken ceasar salad kit, toss together and wrap. Add chicken if you have some...you can buy cooked chicken in the deli, shred it and toss it in the salad. Good stuff!




5. Annie's Organic Anything
Try the skillet meals! Pick up a lb beef, a box of mix and you're good to go!

Quesadilla are my favorite. I will have to try the avocado quesadillas, I love avocados.

I think the chicken caesar wrap sounds delicious but my kids won't eat it....oh well...more for me I guess. lol
