coffee talk: what is your scrappiest meal?

On those days when you have NOTHING in your fridge, what is the most make-shift meal you can whip up?

I'm really good at this so I serve:

  • microwaved tortilla with beans and chease, cut up with a pizza cutter and served it with canned pineapples or applesauce.  Wrong, right?
  • french toast is always an option....if there are any eggs or milk left in the house!
  • canned chicken mixed with boxed couscous (microwaved according to directions) with frozen broccoli bits tossed in there (it's actually one of my faves!)
  • noodles with oil and parmesean cheese is a meal...definitely!
  • grilled cheese, although my kids don';t like grilled cheese- can you believe it?
  • cereal with yogurt and fruit...on hot nights like tonight
AND YOU???

P.S. My husband will feed the kids yogurt, hummus and fruit and we'll eat cereal.

San Francisco Fire House Special: sautee onions and garlic, add chop meat (or turkey/chicken/TVP), cook for a few minutes and then add four eggs (mixed in a bowl) and a load of frozen spinach. We use Tony Chachere's cajun seasoning to give it some flair. It's quick and it's nutritious. If all else fails, pancakes or rice and veggies topped with sweet chili sauce (not for the boy, though..he gets it plain). Quesidillas made with cheese and spinach are also on the quick list.
