Easy Homemade Guacamole

Ingredients
3 California avocados (Hass/Haas)
1 cup medium salsa (I use the Pace brand)
1 Lime
Salt to taste

Directions

Cut open and scoop out the fruit of the avocados, discarding the peel and seed. Place into blender. Cut lime into wedges and squeeze over avocado. Pour in salsa, season with a dash or two of salt. Turn the blender on low/medium until all pieces of avocado are mostly pureed/chopped. Serve and enjoy!

Number of Servings: 4

Roasted Broccoli

Ingredients
1 head broccoli, cut into spears
2 tbsp. olive oil
5 cloves garlic, minced
1 tbsp fresh ginger, finely chopped or grated
1/2 tsp salt
1/2 tsp crushed red pepper flakes

Directions

Preheat oven to 450'F. Toss broccoli in a large bowl with all other ingredients. Roast in oven for 20 minutes, until starting to brown and very tender. Makes 2 large sides or 4 small sides. Serves 2


Yummy Salsa

Ingredients
Red Ripe Tomatoes, 8 plum tomato
Onions, raw, 1 medium (2-1/2" dia)
Jalapeno Peppers, 2.5 pepper
Cilantro, raw, 10 tbsp
Lime Juice, 8 wedge yields

Directions

Slice - dice and cut everything into cube's. Take the seeds out of the peppers before you begin choppng them - or if you want more spice - leave the seeds in or add more peppers. Cilantro I actually add more than 10 tblspns but the option was only table spoon - I add a handful of it, so maybe a half a cup of chopped cilantro fresh - just the leaves. The juice of two limes should be squeezed in at the very end - mix and then chill. For a fast cooling snack or meal I add cold chicken breast to this to make a chicken salsa salad. Serves 1

Tilapia Fish Tacos

Ingredients
4 oz Tilapia filet
taco seasoning
olive oil spray
lime

for condiments:
Avocado
salsa
nonfat sour cream
lettuce
low fat cheese
2 corn tortillas

Directions

place tilapia filet on a piece of aluminum foil place on a cookie sheet. Spray lightly with olive oil spray. Sprinkle taco seasoning on the filet. Slice lime, and place lime slices over the filet. Cover with foil, as if to make a package. Place in a preheated 325 degree oven for about 20-25 minutes. After tilapia is cooked through, open up foil packet, discard lime, and enjoy the fish with you favorite taco ingredients!

Coleslaw

Ingredients

3 cups finely shredded crisp green cabbage
1/4 cup minced onion
1 small carrot, shredded
1/3 cup mayonnaise
1 Tbsp. vinegar
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. celery seed

Directions

Put cabbage, onion and carrot in a bowl. Prepare the dressing with the remaining ingredients and stir well to dissolve the sugar. Pour over cabbage and toss lightly.Serves 6

To make it even better, serve with a fresh salad and a cool sparkling beverage. Great with garlic toast or buttered whole grain bread.

Number of Servings: 6

  I love my job, it gives me a break from my kids!

You can also grill the fish for the fish tacos using the foil method, same for the broc if it's too hot to cook. Now I just need you to come over and cook me dinner! :)
