If your home is anything like mine, what the kid eats is a big topic
of coversation. I try to feed the little one nutritious stuff, and
really, really aim for food that is tasty. My friends have also shared some interesting recipes which I would like to share to make things easier for all the moms with kids. Enjoy!
My kids will eat roasted veggies, but I think the cheese has everything to do with it!
1. Put
diced potatoes and sliced carrots in a baking dish. Drizzle with olive
oil. Sprinkle with basil, oregeno, salt, and pepper. Toss to coat.
Bake at 425 degrees for 20 minutes. When veggies are tender then add
chopped zucchini, chopped red bell pepper, and 2 cloves of minced
garlic. Toss and put back in oven for another 20 minutes or until
veggies are tender. Sprinkle with Colby-Jack cheese. Enjoy!
2. I have a vegetable beef
soup that is quick to make and (I think) fairly healthy, but I'll swap out the beef with ground turkey.
Brown
some ground beef (or turkey -- I'll let you know how that works out)
and then add some beef broth and a can of diced tomatoes, with the
juice. Bring to a boil. Add a diced potato and a bag of mixed frozen
vegetables. Boil that and then simmer for about 20 minutes. Add a few
dashes of Worcestershire sauce and serve with some noodles.
The boys love it, they get a ton of vegetables (albeit frozen ones) and it's fast to make. Plus, left overs!
3. Probably kinda obvious, but pesto is a great fast alternative to the typical red sauce for pasta, and my kids love it:couple cups of fresh basil,a few tablespoons of pine nuts,olive oil (about half a cup), few garlic clovesand pepper
throw
it all in a food processor and chop up. Throw in some parmesan cheese
and a little butter and throw on top of pasta. Also, you can freeze the
pesto mixture minus the cheese and butter for use later.
4.Oven-baked tostadas are fast and healthy. Preheat the oven to 425 and
put some tortillas on a baking sheet,4 preferably a perforated one. Top
the tortillas with refried beans, a little cheese, and whatever veggies
the little one likes -- bell peppers, olives, corn -- and bake for 5-8
minutes. Our daughter loves them and I've only nearly set the house on
fire once preparing them ;-)
