HOW TO CHEAT on making a LAST minute salad...

I find if you buy a big bucket of organic lettuce and toss any combo of all these EASY ingredients, you can get a dinner sized salad (add rolls or a wrap for extra taste) in no time flat. It's a no brainer but I always forget to add beans or sprouts- they add a whole lot of texture and filling-ness.

DON't MIX them all, obviously...just pick like 4-5 and chow!


ROTISSERIE chicken, already cooked
Deli ham, sliced
HB eggs
Shredded cheese
Shaved carrots
Garbonzo Beans
Kidney Beans Precut veggies
Cherry tomatoes
Canned mini- corn OR organic corn
Canned chicken
Stir-fry packets of raw veggies
for taco-style- guacamole w/ cheese, black beans and salsa
Sprouts
Sesame seeds
Sugar snaps


In the summer, grab anything from the garden and MIX it in.
cucumbers
tomatoes
whatever healthy things you've got going on...

For dressings, I like:
salsa
ginger/asian dressing
goddess on anything, including sandwiches

  Life is crazy but wonderful.

my kids love it when I top their salad with sunflower seeds. I always add fresh spinach also. It adds extra vitamins.

  I'm a big kid now.

I love sunflower seeds on my salad! I also like fruit on them, such as apples, raisins, or dried cranberries. They make the salad sweet and so tasty!

I love dried cranberries on my salad also, but I'm the only one.
