5 tips for an easy, healthy lunchbox!

Back to school means packing lunches!

It's kind of a nighmare sometimes because kids are picky and they change their minds. One week they love turkey, the next they hate it. Most schools don't allow peanut butter and kids always complain that they don't get what their friends get (I hear about fruit roll-ups all the time!). How in the world can packing a lunch be so stinking difficult?

Here are some EASY TIPS for lunchbox time:


1. Make your own mix-n-match lunch-ables with these ideas:
  • wheat crackers
  • cheese cubes
  • cherry tomatoes
  • sliced fruit
  • dipping yogurt
  • raisins
  • dried fruit
  • organic applesauce
  • mandarin oranges
  • cold cuts
2. Freeze yogurt tubes, they stay cool until lunch.

3. Use a thermos for leftovers, soups, annie's mac n cheese or stars pasta, couscous, rice, beans, or any other warm dish options.

4. Always order extra pizza! If you order delivery, snag an extra and freeze the pieces. Kids can eat pizza leftovers whenever lunch options run slim.

5. Limit the SUGAR. Remember, teachers have to deal with our hopped up kids. Make sure drinks have no corn syrup and that they are relatively healthy by choosing smallerboxes and 100% juice. OR pack your own diluded juice in one of the kleen canteen or siggs safety bottles.

It is a pain, but we all have to do it, right? PLEASE chime in your ideas because lunchboxing gets boring fast!

This is the part about school I dread. The part about lunch I struggle with is the main part. We don't eat meat and he is super picky right now so all he will eat is P&j, tofurkey and cheese and burritos. I allow him to get pizza on Thursdays so that just leaves me two more days I guess to think of other things. He won't touch hummus (drives me insane).

I use a bento box so I focus on filling each section with healthy stuff so he ends up having a variety of smaller amounts of things to pick from.

  I love my job, it gives me a break from my kids!

What about cereal for lunch? There's nothing wrong with a box of multi-grain cereal, a container of berries, and a thermos of milk for lunch if that's what your kid really wants.

This is another good one, low-fat cream cheese with apple slices on cinnamon-raisin bread.

I also use cookie cutter for cheese shapes. My DD loves getting cheese in the shape of ducks or gingerbread men. You could also use shapes for sandwiches.

I also don't freak out if they don't eat everything. It helps me gauge what they like or if they are in a dormant growing stage. It also doesn't put pressure on them to join the clean plate club!
